MIRA-Dashi®:The Future of the Broth
To bring out the full flavor of Kyoto’s plant-based ingredients, we use MIRA-Dashi®, a plant-based broth developed by Fuji Oil Co., Ltd.
MIRA-Dashi® is a product developed using MIRACORE®
— a proprietary technology from Fuji Oil Co., Ltd., built on 70 years of research in protein and oil — to recreate the rich flavor and satisfaction of traditional broth without using any animal-derived ingredients.
The Meaning Behind Terravenir
Terravenir combines “Terroir”, representing local heritage, and “Avenir”, meaning future. The name embodies our aspiration to explore the future of gastronomy through French cuisine, grounded in the ingredients and traditions of Kyoto.
Our Commitment to the Terroir of Kyoto Kyoto, with its deep-rooted tradition of shojin ryori (Buddhist vegetarian cuisine), At Terravenir, we cast light on these exceptional local ingredients, creating dishes that bring their full potential to the forefront.
A New Expression of Luxury: French Cuisine × Vegan We focus on creating a plant-based dining experience that’s every bit as satisfying as traditional courses created with meat and fish. While rooted in the rich, full-bodied flavors of classic French cuisine, our dishes offer a light, gentle experience which is mild to the body.
Our goal is to add a new form of luxurious, animal-free dining style to the luxury meals served in the hotel restaurant.
